So easy to make, yet so rich in flavour. Indulge your dinner guests in this incredibly tender roasted leg of lamb—you bet they’ll be asking for seconds!
Cooking Time: 20-30 mins
Servings: 3-4
Ingredients:
- 2.5kg boneless lamb leg
- 4 – 6 cloves garlic
Marinade:
- 250ml cooking oil
- 1 tsp dried thyme
- 1 tsp fennel seeds
- 1 tsp cumin
- 2 tsp garlic powder
- 1 tbsp salt
- 1 tbsp cajun spice
- 2 tbsp paprika
- 2 tbsp black pepper

Method:
- Cut garlic into smaller pieces.
- Using a parring knife, make small slits in the lamb leg
- Poke the garlic pieces into the slits.
- Mix the marinade ingredients in a bowl.
- Pour over the lamb leg and rub the marinade all over evenly and thoroughly, including the slits and cavity.
- Marinate the lamb leg for at least 6 – 12 hours.
- Preheat oven at 160°C.
- Pierce and secure the lamb leg with the roast pin then install into the oven.
- Roast for 45 minutes using the Grill with Fan function.
- Once cooked, let the meat rest for 15 minutes before slicing.
- Serve with gravy and your preferred side dishes. Enjoy!
