- Mash the fresh durian flesh into a smooth paste.
- Spread the durian evenly over the pastry, leaving a small border around the edges.

- Air fry at 180°C for 10 minutes, then increase the temperature to 200°C for another 5 minutes, or until golden brown and crispy.

Ingredients
Coconut SLUSHi
- 1,000ml water or coconut water
- 450ml coconut milk
- Sugar syrup (3 tbsp sugar + 100ml hot water)
Gula Melaka Syrup
- 100g gula Melaka
- 50ml water
- A pinch of salt
Toppings
- Fresh durian
- Sweetened red beans
- Cendol jelly
Instructions
Prepare the Gula Melaka Syrup
- Finely chop the gula Melaka.
- Place it into a saucepan together with the water and a pinch of salt.
- Cook over low heat until fully melted and slightly thickened.
- Set aside to cool.
*The syrup can be prepared in advance.
Make the Coconut SLUSHi
- Pour the coconut milk, water (or coconut water), and sugar syrup into the SLUSHi machine.
- Select the SLUSH function and allow the machine to run for approximately 30 minutes, or until the desired slushy consistency is achieved.
Assemble the Dessert
- Dispense the coconut SLUSHi into a tall serving glass.
- Drizzle generously with gula Melaka syrup before adding sweetened red beans and cendol jelly.
- Finish by topping with plenty of fresh durian.
